Chocolate Chia Seed Pudding (raw & vegan)
In the spirit of chia and low sugar dishes, you will not believe how simple and delicious this dessert is!
2 cups unsweetened Coconut Milk (any milk substitute will work)
7 tbsp of chia seeds
5 tbsp of raw cacao powder
1 tbsp of almond or vanilla extract (or 1 tsp of vanilla bean powder)
1 tsp cinnamon (optional)
5 tbsp of maple syrup (or alter to taste)
Get this! Whisk all together in a glass bowl. (at least a 6-cup size)
Refrigerate for 3-4 hrs (or overnight)
Yep! That's all there is to it!
It makes a tapioca-like pudding that you can customize to your own needs and taste!
You can even omit the cacao to make a "vanilla" version (double the vanilla component for this)
Add: protein powder, peanut/almond butter, cayenne powder, berries.
You can also blend it for a smoother texture.
