'Tis the season for hearty warm soups!
Crock Pot Split Pea Soup
1 tbsp coconut oil/butter
2.5 cups split yellow peas
1 med-large onion
2 celery ribs
1 patty pan (summer) squash (optional)
5 (or so) collard greens
1 bunch fresh parsley
2 smoked turkey legs (Oakridge Acres)
2 tsp curry powder
2 tsp Herbs de Provence (LeClef)
1 kelp leaf
Melt butter in warmed crock pot
Chop all vegetables, place in pot with spices and stir to coat
Add turkey legs (I use them straight from frozen)
Add enough water to cover everything
Slip kelp leaf into mixture
Add bay leaf or salt/pepper to preference
Turn pot on (I usually use "high" for 4 - 5 hours)
Near the end of cooking, pull out turkey legs, de-bone, hand blend and put bite-sized pieces of meat back in.
Feel free to change up the veggies, spices or make it vegan!
Try topping it with truffle oil! Mmmmm!
