-1 tbsp extra virgin olive oil -1 head of red cabbage - chopped into strips -1/2 lb (or so) of bacon/pancetta/prosciutto (or none to keep it vegan) - cut into small pieces -1 large onion - sliced -1 garlic clove (optional) - sliced -1/4 cup of raw apple cider vinegar -sea salt & freshly ground pepper to taste
Brown olive oil, bacon & fennel seeds to a large pan with a lid. Add onion/garlic and cook until tender or almost caramelized. Add cabbage, salt pepper and vinegar and mix carefully. Place the lid on and simmer on low heat for 1 hour or so, stirring occasionally. Serve with parsley or your favourite herbs or spices Enjoy!
